The success story began when Campbell Catering won one of the biggest public sector contracts in Northern Ireland. They had to create a new division to service the contract.

The overall business strategy was to change the product, the food served, from convenience foods to quality freshly cooked, nutritious food and in doing that, make a profit. They also had to change the culture of the existing catering methods and to improve craft skills at all levels.

The process involved re-educating 70 chefs to produce freshly cooked food and learn about ingredients and design for menus, how to order the necessary supplies, develop profit centres at each catering facility, have pride in their kitchen and deliver a consistent high standard.

Novel ideas were deployed such as fun workshops similar to the television programme “Ready Steady Cook” where chefs used their imagination, creativity and spontaneity to deliver dishes to a prescribed budget. A chef’s forum was also established in 2004 to give them a say in the content and style of training and workshop programmes.
